The Grain-Free Life

Those of you following Micki Rose on her grain-free road to health (see my blog post last month and her new website ) and who may have tried Jacquie Broadways’s Amaranth and almond bread recipe will be glad to know that our first consignment of flours (amaranth, teff, chestnut and quinoa) from Pure Nature in Germany arrived within a couple of days.

We have already made a couple of variations on Jacquie’s recipe – one substituting chestnut flour for the amaranth (delicious but very sweet – really just like a cake) and one 2/3 teff to 1/3 chestnut (not as sweet but equally good) and are planning several more….  Including a chestnut  and almond flour only version with either some cocoa powder or nibs of dark chocolate…..  Watch this space!

Meanwhile, to order more flour…….. If you look in in the ‘baking’ and ‘bread’ sections of the Pure Nature site you will find a veritable treasure trove…. I have just ordered chestnut (organic), hemp (organic), hazelnut (organic), walnut (organic), teff, coconut (organic) and tiger nut flour!!

    Tiger Nut Flour sounds v unusual. Would love to know how you get on with it. I’ve only ever had Tiger Nuts in Spain ground into a drink known as Horchata – very refreshing too.

    Do you know anywhere to get gluten-free Sorghum flour?

    Hi Caroline – I did not notice an sorghum flour on the Pure Nature site – but I’ll keep my eyes open. Yes, the only dealings I have ever had with tiger nuts was in that horrendously sweet drink – which was why I was interested in trying them on their own. Keep you posted!
