Quick update! Jacquie Broadway reminded me that although it is tiny, has the best amino acid profile of any grain around and only 11% gluten (according to the Glutenology table that Micki Rose quoted in her original article) teff is still a grain – sorry all – was getting carried away!
I was also crowing to Jacquie about my latest variation on her original excellent recipe – combining gram flour, amaranth and ground almonds – and she flagged up the fact that for those who have a problem with soya, gram flour (chickpea flour) can also be dodgy as the pulses are so similar.
